Vana Grimoire: Beltane koekjes

We love sharing our baking with friends, and what better to share than our Beltane cookies?

The sweetness of the white chocolate, combined with the freshness and slightly tart taste of the organge zest, makes this cookie very summery and harmonious - Just like Beltane festivities.

Our recipe gives you about 20 cookies.

You’ll need the following ingredients:

  • 500 grams of all-purpose flour
  • 1 tablespoon baking powder (1 satchet)
  • 275 grams of butter, softened
  • 180 grams of granulated sugar
  • 1 tablespoon of vanilla extract
  • 1 egg
  • Zest of 3 oranges
  • 100 grams of white chocolate (cut in small pieces, or chocolate chips)
  • Dash of salt

Needed tools:

  • Baking sheet + parchment paper
  • 2 mixing bowls
  • mixer

      Let's bake:

      1. Preheat the oven at 175*C
      2. Take a baking sheet and line it with parchment paper
      3. Sift the flour, baking powder and salt, and stir the orange zest through it.
        (To get the zest of an orange, grate the orange part of the peel)
      4. In a separate bowl, use the mixer to cream your butter. Add the sugar gradually. When it is mixed, add the vanilla and egg and mix until it is a creamy, homogeneous mixture.
      5. Add the dry flour mixture slowly to the butter. Add it bit by bit and mix until the two mixtures are fully combined.
      6. Cut the white chocolate in small pieces (or use white chocolate chips) and add them to the bowl. Slowly fold it through the mixture.
      7. Roll the cookie dough in small balls (ours were about 60 grams each), put them down on the baking sheet and flatten them a bit. Make sure to leave a few centimeters between each cookie.
      8. Bake the cookies for about 12-17 minutes or until they’re beginning to brown in the preheated oven.
      9. Allow the cookies to cool completely on a cooling rack before putting them in a cookie tin.
